Marshall’s Sweet Send-Off Part 1 – Chocolate Sheet Cake

I have been baking like it’s my job the past two days.  Why?  Mostly because I like it, that’s why!  Also, I was asked to make a couple of desserts for a send-off party that a friend is throwing for one of the men (Marshall) at our church who is getting ready to deploy for the second time this year.  Wow that is one long run-on sentence, and I don’t have the time or patience to edit it.  Forgive me.

So like I was saying, of course I took advantage of this par-tay and agreed to bake (test out) several recipes I’ve had bookmarked as interesting.  My MIL suggested a pound cake, but in my usual to-the-point (rude!  man, I’m a jerk) fashion, I said:

Too boring.”

So here’s the line-up I made instead: The Best Chocolate Sheet Cake, Ever, Dulce de Leche Cheesecake Squares, and White Chocolate Mocha Cupcakes (which I also found on the interweb, but can’t find the link).  Coincidentally, I just listed those in my order of preference from least to most favorite.  They were all good, but the cupcakes ROCKED MY SOCKS RIGHT OFF!

Instead of making this one huge post full of recipes, I’m gonna post each recipe one at a time.  Over the next day or two or three.  So you’re gonna have to wait for that cupcake recipe – muahahaha (or you could just google it yourself…but that’s no fun for me…so don’t do that!)

We’ll start with the sheet cake.  I have never made a sheet cake before, and it was SOOOO easy!!  This recipe gets tons of points for that.  Plus it is a yummy chocolaty confection, and who can argue with that?  On it’s own, it was good, but didn’t really do anything special for me.  However, if you eat it warm and add a scoop or two of vanilla ice cream – well, you’ll just have to trust me and try it. YUM CITY.

This is a great recipe for last-minute affairs, and for feeding LOTS of people.  This makes a BIG cake!  Potluck?  Take this!

Chocolate Sheet Cake by The Pioneer Woman

Combine in a mixing bowl:

-2 cups flour
-2 cups sugar
-1/4 teaspoon salt

In a saucepan, melt:

-2 sticks butter
-Add 4 heaping tablespoons cocoa. Stir together.
-Add 1 cup boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool.

In small bowl:

-1/2 cup buttermilk.
2 beaten eggs
1 teaspoon baking soda
1 teaspoon vanilla

Stir buttermilk mixture into butter/chocolate mixture. Pour into sheet cake pan and bake at 350-degrees for 20 minutes.

While cake is baking, make icing:

-Chop 1/2 cup pecans finely.
-Melt 1 3/4 sticks butter in a saucepan.
-Add 4 heaping tablespoons cocoa, stir to combine, then turn off heat.
6 tablespoons milk
1 teaspoon vanilla
1 lb minus 1/2 cup powdered sugar
Stir together.
Add pecans, stir together, and pour over warm cake.
